Pecans. Make sure to chop them finely before adding to the recipe.
Unsalted butter. Using unsalted butter helps control the saltiness of the finished cookies. Let the butter soften at room temperature for a few minutes so it’s easier to work with.
Vanilla extract. Use pure vanilla extract, not imitation flavor, for richest flavor.
Almond flour. Double check your label to ensure you buy FLOUR and not almond MEAL. The labels look similar but the products are different.
Powdered monk fruit sweetener. This naturally occurring sugar free sweetener gives these cookies their sweetness, without the unpleasant aftertaste of so many artificial sugar substitutes. Powdered monk fruit looks and acts like powdered sugar in baking.
Easy Instructions
First, get a cookie sheet ready by lining it with parchment paper.
Make the cookie dough:
Cream softened butter with powdered monk fruit sweetener. Add the almond flour, vanilla and salt. Use your hands to mix in the chopped pecans.
Bake the pecan sandies:
Scoop the crumbly dough into balls about 2 inches wide. Place evenly spaced on the lined baking sheet. Flatten slightly with your hand.
Bake for 11 -13 minutes until edges begin to brown. Remove and cool completely before enjoying.

- 1/2 cup unsalted butter, softened
- 1/2 cup powdered monk fruit sweetener
- 2 cups almond flour
- 1/4 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1/2 cup pecans, finely chopped
Instructions
- Preheat oven to 350 degree F. Line a cookie sheet with parchment paper, set aside.
- Cream butter and powdered monk fruit sweetener together in a large bowl. Add almond flour, salt and vanilla extract. It becomes very crumbly. Use your hands to mix in the chopped pecans, until it becomes a ball.
- Using a 2Tbsp cookie scoop, scoop dough and place on baking sheet with parchment paper, about 2 inches apart. Flatten the cookie slightly with the palm of your hand.
- Bake cookies for 11-13 minutes, just until lightly browned on edges. Remove from oven and flatten slightly. Cool completely.
