Mozzarella and Parmesan cheese. I prefer to grate the cheese from blocks myself for best taste and consistency. Feel free to swap these out for other Italian cheese such as Romano.

Eggs. These help the gluten free garlic bread stay together. Beat and let the eggs come to room temperature before adding them to the dough.

Garlic. You’ll need two cloves of garlic, peeled and minced finely, to make your garlic bread complete.

Olive oil. Completely optional, but it’s delicious when served with the garlic bread for dipping!

Melt the cheese.

Place all but half a cup of your mozzerella in a microwave safe bowl. Heat for 30 seconds in the microwave. Add additional time if needed to melt the cheese.

Make the dough.

Mix the melted mozzarella with almond flour. Fold in the beaten eggs. Stir in garlic powder, salt and baking powder.

Bake

Use your hands to shape the dough into a loaf form. Place it on a greased baking tray. Bake for 5 minutes.

Add toppings.

Sprinkle the remaining cheeses and minced garlic. Bake for 15 more minutes. The mozzarella should be browned and bubbly when the bread is ready to remove.

Garnish.

Sprinkle parsley over the slightly cooled gluten free garlic bread before serving.

  • 1 ½ cups almond flour
  • 2 large eggs, room temperature
  • 1 teaspoon garlic powder
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 2 cloves garlic, minced
  • 2 Tablespoons grated parmesan cheese
  • 1 Tablespoon fresh parsley, chopped

Instructions

    1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. Set aside.
    2. Place 1 cup of shredded mozzarella into a microwave-safe bowl. Microwave on high for 60 seconds; check if it melts it. If not, add 30 extra seconds.
    3. Mix melted mozzarella with almond flour. Stir to combine.
    4. Fold in beaten eggs (it is essential for the eggs to be at room temperature). Stir to combine ingredients. It might seem tricky initially, but if that happens, simply use a spatula to incorporate the eggs with the cheesy dough.
    5. Add garlic powder, baking powder and salt. Stir until combined.
    6. Place the dough onto the prepared baking tray. Use your hands and spatula to shape the bread into nice-looking garlic bread.
    7. Bake the bread for five minutes, then remove it from the oven, top it with the remaining ½ cup of mozzarella, minced garlic, and parmesan cheese. Bake for another 15 minutes or until the bread is golden and mozzarella is brown and crispy.
