Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 Tablespoon olive oil
  • 3/4 cup chicken broth
  • 1 lemon, juiced (about 2 Tablespoons)
  • 4 cloves garlic, minced
  • 3/4 cup heavy whipping cream
  • 3/4 cup grated parmesan cheese (or freshly shredded)
  • 1 Tablespoon fresh parsley
  • 1/4 teaspoon crushed red pepper flakes
  • 1 lemon, sliced, for garnish

Instructions

  1. Pound chicken breasts to even thickness, about 1/2-inch thick or less. Season with salt and pepper.
  2. In a large skillet, over medium heat, add olive oil and heat for about a minute. Add in chicken and cook until browned on each side (and fully cooked through). Takes about 10 minutes. Remove chicken from pan and set aside on a plate.
  3. To the skillet, add chicken broth and deglaze the skillet over medium heat. (see notes)
  4. Add lemon juice, garlic, and heavy cream to skillet with the chicken broth. Heat over medium heat, stirring often with a whisk, until slightly thickened and bubbly. The broth will reduce and the sauce will be a little less than what you started with. This process takes about 10-15 minutes.
  5. Add in parmesan cheese and whisk until smooth. Return chicken to skillet and simmer over low heat for about 5 minutes until warmed.
  6. Garnish with parsley, crushed red pepper flakes, and lemon slices. ENJOY.
